This recipe came about when my mum and dad first discovered frozen peas. It was funny because, back then, peas were the only vegetable that they were happy to buy frozen. Well, that and the fact that our second-hand fridge had a freezer compartment that was so tiny, it was almost full after placing the peas in it.

  1. Fill and boil the kettle.
  2. Place a wok on a medium heat, then add the following ingredients in this order: 200ml (7fl oz/¾ cup plus 2 tbsp) hot kettle water, ghee or vegetable oil, cloves, peas, garlic paste and vinegar. Stir-fry for 6 minutes.
  3. Add the ground cardamom and cumin, and salt to taste. Stir well.
