An iconic dish, which tastes best when delicately spiced. This was one of the dishes we made when we had unexpected guests: spinach and potatoes, picked straight from the garden, washed under the outdoor tap and placed straight into a pan. To save you chopping the spinach, place it in the freezer overnight, then crush it in the bag.

Ingredients

  • 2 medium potatoes
  • 2 green chillies, or to taste

Method

  1. Fill and boil the kettle.
  2. Peel and dice the potatoes into 1cm (½ inch) cubes. Slit the green chillies lengthways.
  3. Remove the spinach from the freezer and crush it in the bag, which saves you chopping it.
  4. Place a wok on a high heat, then add the following ingredients in this order: 300ml (10fl oz/1¼ cups) hot kettle water, ghee or oil, potato
