If I asked you to think of an Indian potato dish, I’m sure many of you would say Bombay potatoes. In this book I want to share a new way of enjoying potatoes. I’ve taken the most humble vegetable and paired it with one of the most exquisite spices. You only need a little cardamom to deliver pungent, aromatic notes.

Ingredients

  • 2 large potatoes
  • 2 green chillies, or to taste
  • 2 tbsp vegetable oil

Method

  1. Fill and boil the kettle.
  2. Peel the potatoes and dice them into 1cm (½ inch) cubes.
