Marrows are essentially courgettes that are left to grow for longer. My mum once won a prize for her home-grown marrows. I still remember her saying it was the first time that she had ever won anything.

Ingredients

  • 6 courgettes (zucchini)
  • Handful of fresh coriander (cilantro)
  • 1 green chilli

Method

  1. Slice the courgettes into thin rounds.
  2. Chop the fresh coriander and slit the green chilli lengthways.
  3. Place a wok on a medium heat, then add the following ingredients in this order: ghee or oil, ajwain seeds, cumin seeds, green chilli, ginger paste, turmeric and chilli powder. Stir well and stir-fry for 7 minutes.
