Easy to make and absolutely delicious, puris should be eaten in moderation. Deep-fried golden breads were very popular as we grew up. If we were hosting guests or went to visit family and friends, puris were always on offer. The word ‘puri’ means ‘complete’ in Hindi.

Ingredients

  • 1 tsp vegetable oil, plus extra for deep-frying

Method

  1. Pour oil into a wok to the depth of 8-10cm (3-4 inches) for deep-frying and heat it to around 180°C (350°F).
  2. In the meantime, put all the ingredients in a mixing bowl and add about 150ml (5fl oz/scant ⅔ cup) cold water, a little at a time, to create a firm dough. Knead for 1 minute.
  3. Divide the dough into roughly 12 portions – I tend to use around 40g
