These rotis are light and packed with flavour. Sometimes I will add a hot chilli to them too, so feel free to do this. The recipe uses tinned mango pulp, which is a little better on the budget and makes it quicker to create the rotis.

Ingredients

  • 200 g (7 oz) fresh mint
  • Juice of 2 limes

Method

  1. Chop the fresh mint.
  2. Combine the mint, lime juice, mango pulp, chapati flour and ghee in a large mixing bowl. Bring the ingredients together with your hands, then knead to create a soft, pliable dough. This should take 6 minutes.
  3. Divide the dough into roughly 16 portions – I tend to use around 50g (1¾oz) of dough per roti – and shape into smooth balls
