This was a chutney often made whilst mum and dad waited for their weekly wages. We bought onions and potatoes in bulk, and usually by the end of the week we would still have onions, but very little else. This was probably our favourite chutney at home.

Ingredients

  • 1 tbsp vegetable oil
  • 1 tsp ajwain seeds
  • 1 tsp

Method

  1. Fill and boil the kettle.
  2. Place a wok on a medium heat, then add the following ingredients in this order: 100ml (3½fl oz/scant ½ cup) hot kettle water, vegetable oil, ajwain seeds, brown mustard seeds, frozen chopped shallots, cumin seeds, nigella seeds, turmeric, chilli powder, salt, ginger paste, garlic paste, jaggery and vinegar. Place the lid on the wok and
