‘Achaar’ in Hindi means ‘pickle’ and traditionally this is a popular spice blend to pickle vegetables with. You can also use it for an even quicker approach to cooking Indian food. Making this blend is so worthwhile, and it is one of my favourite masalas.

Ingredients

  • 10 dried Kashmiri chillies, or to taste
  • 4 tbsp coriander seeds
  • 2 tbsp

Method

  1. Put the dried chillies, all of the spice seeds, peppercorns and the salt in a dry frying pan.
  2. Set the heat to low and gently roast the spices, stirring frequently, until you can smell the aromas and the spices have changed colour. This should take 3-4 minutes.
