Often, the taste of ginger from a tube can lack flavour. Preparing your own ginger paste will give these 15-minute Indian recipes maximum flavour. Creating something delicious from scratch, and having it readily available, makes life so much easier when you have a busy lifestyle, juggling family and work.

Ingredients

  • 400 g (14 oz) fresh ginger
  • 3 tbsp vegetable oil

Method

  1. Peel and roughly chop the ginger, then place in a blender.
  2. Add the oil and salt and blitz to a smooth paste.
  3. Transfer the paste to a sterilized airtight jar, top with a little extra oil and store in the fridge for up to 5 days. Alternatively, divide the paste between the holes of an ice-cube tray and store in the freezer for up to 3 months.
