I often travelled to Paris when we used to visit my husband’s grandmother. The loyalty to the croissants of one bakery or another surprised me. Baguettes might be bought from one boulangerie but croissants from another. In the UK we have borrowed the format of the pastry and its familiarity is embedded but we have not yet, for the most part, adopted the care with which they are made or appreciation for a truly special croissant.
