These came about when we were making a pumpkin sourdough bread and had extra pumpkin to use up. If Provolone is difficult to find use Mozzarella and Parmesan instead. Any firmish filling that works in a galette or tart will work well inside the slightly sweet laminated pastry; just make sure it is properly seasoned. Taleggio or blue cheese both work well instead of the provolone. Or use feta cheese with dried chilli flakes and fresh oregano leaves instead of the sage. You can piece together
