Before I opened Margot I ran a cake business; it coincided with the early days of the cupcake trend and at a time when blogs were a key method of communication with other bakers. I decorated in royal icing – from princesses and cartoon characters to logos – anything a customer asked for. When I came to open Margot I wanted a new approach to decoration and though we still write ‘happy birthday’ on cakes or decorate cookies, we work in a more natural style. T
