Gingerbread Dinosaurs

I often joke that if we stopped making these cookies, the children of East Finchley would riot. We sometimes run out of bread and occasionally sell out of pastries, but one of the core principles of managing the pastry section and front of house at Margot is that gingerbread dinosaurs must be on the counter at all times.
