When I decided to add muffins to our repertoire, they seemed a logical extension of our morning offering – a little more fruit and a little less sugar and butter than cakes and pastries. I was aiming for tender muffins as good in the afternoon or even the next day as they are just after baking, and that did not dry out as soon as they cooled down.
