This cake works equally well with plums or dark berries, though I include figs as they have a geographical connection that pleases me; khorasan being an ancient variety of wheat originating in the region that is now modern Iran and Afghanistan. I make it when I want a simple fruity cake for the counter or at home. The khorasan flour works well with the rich fruit, it is a flour with an interesting, nutty flavour and is nutrient-rich. There is some evidence that it is easier to tolerate and
