One of our bakers, Alvaro, did a test last year to establish whether salt made any difference to frangipane and his verdict was that it does. He made two batches side by side, one with salt and one without. A pinch of salt in most cakes enhances the flavour and this is also true of frangipane. It can be used in Almond Croissants of course but also to fill tarts.
