The oven is useful for making jam at the bakery but it is also true at home – one doesn’t need to be hovering and agonising over a bubbling pan with this recipe. It might not be quite as perfect as traditional jam and needs to be stored in the fridge, but plums have a high proportion of pectin and so it will set fairly well. It has less sugar than a traditional jam so works as a compote on yoghurt for breakfast too, which is my favourite way to eat it.
