Red Onion Marmalade

I think this recipe originally came from the Evening Standard some time in the early noughties when instead of taking screen shots of endless recipes or ideas on my phone and then losing them as I now do, I used to cut them out and keep them in a folder for reference. There were some proper gems and I learned a lot from the Evening Standard and weekend newspaper supplements in the days when I had the time to read the papers for pleasure on weekend mornings. I have made it many
