This is like a salty, very fresh-tasting bellini. It’s a drink I developed for the restaurant Rök, as one of their signature cocktails, which is also suitable for drinking with food. It sums up the restaurant quite well as they’re very into fermenting and pickling, techniques which are mirrored in the drink.
Stir all the ingredients together in a mixing glass then pour into a flute. Garnish with fresh dill.
