This is like a very loose, salty twist on a piña colada, using the savoury flavour of miso and other Japanese-inspired ingredients to sit alongside the theme of the menu at Bone Daddies.
For the clarified coconut milk I use the Koko brand as it splits really easily, producing a beautifully clear liquid.
Mix all the ingredients except the soda in a shaker over ice, shake and strain into a highball. Top up with soda and garnish.
