When you order a Manhattan, you can choose from a perfect, sweet or dry drink. A ‘perfect’ Manhattan has an even mixture of sweet and dry vermouth alongside the bourbon, and I wanted to think about how you could create a martini in the same way. The only way for me to do that was to distil the flavour of sweet vermouth into a spirit. The result is a wet martini but with the flavours of sweet vermouth.
