I was introduced to apple marigold by a farmer and just thought it was one of the most amazing herbs. I knew straight away that it was something I wanted to use at Scout. Its flavour is like a herbaceous green apple and I wanted to create a drink that played on its freshness. The result is this spritz-style cocktail. I buy our apple marigold from a grower called Westlands in Worcestershire.
