When you go for training at Woodford Reserve, the guys there give you a taste of their unaged bourbon – it tastes like green apples. I wanted to recreate that flavour but using their aged bourbon. At the time I was working with someone who had asked me to distil kiwis, and it so happens that when kiwis are distilled they taste like green apple. So I distilled kiwi along with the aged Woodford Reserve to ‘remake’ the flavour it had before it was aged.
