I worked on this with my bar manager at Peg + Patriot, James Stevenson. It’s a take on a Manhattan – flavoured with watermelon to make it more thirst-quenching.

Method

Stir all the ingredients over ice in a tin, then strain into a chilled glass. Garnish with cucamelon and express the oil of the orange zest over the top, then discard.
