A take on an old fashioned, this drink was developed in collaboration with Alan Sherwood, my bar manager at Scout. It plays on the buttery flavour of honey-roasted parsnips, hence the brown butter bourbon, but also uses parsnips’ natural acidity, which makes it a fresh-tasting drink.

Stir in a mixing tin. Strain into a rocks glass filled with ice and garnish.
