Cardinal Thomas Wolsey is the man credited with first putting the classic combination of strawberries and cream together, hence the name. I’ve gone for an Italian take on that concept, using ricotta instead of cream, and pairing it with Franchetto, an Italian sparkling wine, which has a lovely lemony flavour and brings a freshness to the drink.
