A twist on a piña colada, this drink is light and airy, with a mild-flavoured peanut milk used in place of coconut. The recipe for the banana syrup is adapted from Dave Arnold’s.

Ingredients

  • 60 ml (2 fl oz) Plantation Pineapple rum
  • 50 ml (

Method

Put all the ingredients except the soda into a shaker. Shake and double strain then pour into a highball filled with ice.
