One of the things I like about distilling chilli is that you get all its fresh flavour without any heat. When you smell the distillate, it smells as if it’s going to taste really spicy, and then you drink it and it has no heat whatsoever. It messes with your senses a little bit.
Stir in a mixing tin over ice and pour into a chilled sour glass. Garnish with lime zest.
