When we started out at Peg + Patriot, I wanted to make drinks that reflected or were reminiscent of the local area. Bethnal Green has a strong Jewish heritage, while my wife’s family used to have a Jewish restaurant on nearby Brick Lane called D. Groner. I created this sazerac, made from a distillate of salt beef, as a nod to both.

Stir in a mixing tin, then pour into a tumbler filled with ice and garnish.
