Method

Blend the banana and pectinase in batches in a high-speed blender for 5 minutes until liquid. Pour the liquid into a large jug.

In a centrifuge, divide the liquid evenly between the buckets and spin at 4000 rpm for 20 minutes. Pour off the clarified juice and strain through a muslin (cheesecloth).
