  • 2 kg ( lb) fresh ginger
  • caster (superfine) sugar

Method

Juice the ginger. Weigh the liquid and add an equal amount of sugar to it. Place in a heavy-duty blender and blend until the sugar has dissolved. Bottle the syrup.
