Method

Firstly, always buy rowan berries from your forager or farm shop when in season, and try to make enough liqueur to last the year.

Blitz the fruit in a blender then place the fruit and vodka in a large vac bag and seal to maximum pressure without spillage.

Set the water bath of a sous vide machine to 70°C (158°F), cook and leave to infuse for about 20 hours.
