The best thing about these is that the custard is deliciously rich, but the filo pastry is lovely and light. The perfect excuse to have more than one, I reckon!

Ingredients

For the Filling

  • 3 egg yolks
  • 125 g caster sugar
  • 2 tablespoons

Method

Preheat the oven to 180°C/fan 160°C/gas 4.

Place the egg yolks, caster sugar and cornflour in a non-stick saucepan and mix together. Add the cream, milk and vanilla extract, whisking until smooth with a balloon whisk.
