The girls will love this contemporary version of the classic prawn cocktail, especially when served in supercool glasses.

Ingredients

  • 2 Baby Gem lettuces, finely shredded
  • 4 spring onions, very thinly sliced
  • sea salt and freshly ground black pepper

Method

In a bowl, mix together the Baby Gems and spring onions, then season with salt and pepper and a squeeze of lemon juice.

Season the crabmeat and crayfish with salt, a pinch of cayenne pepper and a squeeze of lemon juice.
