These delicious, light desserts are ideal for cutting down on last-minute panics since they need to be made well ahead of time. They are quite potent, so don’t offer them to any drivers.
Place the gelatine leaves in 200ml cold water to soften for a few minutes.
Strain the lemon juice into a saucepan and place over a gentle heat. Add the sugar and stir until it has dissolved.
Remove the gelatine leaves from the water and stir them into the hot lemon juice until they have completely dissolved. Add the water they were soaking in and finally stir in the limoncello.<
