There’s no precise recipe to follow here - it is entirely up to you how much you put into each tall glass. Enjoy being extravagant, layering up the vanilla and coffee ice-cream, espresso syrup, banana, meringue, whipped cream and chocolate-crusted pecans.

Method

The crunchy chocolate pecans can be prepared days in advance and stored in an airtight container. Heat a medium frying pan over a low to medium heat, add the nuts and toss around to toast lightly for a minute or two. Mix together the sugar and cocoa and sift over the top. Continue to toss around until the sugar melts and coats the nuts. Tip on to a plate lined with greaseproof paper and leave t
