Barbecues - the ultimate boys’ toy. You’ll be as proud as punch cooking home-made burgers for your boys’ night in. However, take it from me, blackened burgers are ’orrible. Be patient, let the BBQ reach a white heat, then cook the burgers until they’re nice and golden.

  • 1 kg lamb mince (don’t use extra-lean mince for burgers, because the fat will keep the burgers moist and add flavour)

Method

To prepare the burgers, place everything except the burger buns in a large bowl and mix until thoroughly combined. I find it best to squish everything together using my hands. Yes, it’s messy, but it’s far quicker.

Shape the mixture into six burgers, or, if you want quarter-pounders, make twelve. Place in the fridge for half an hour or so to firm up if you have the time.
