This is a really tasty dish and wonderfully easy to make. If you fancy a bit on the side, serve with some crusty bread to mop up the delicious juices or you could make the Toasted Ciabatta with Roasted Garlic.
Wash the mussels in cold water, pulling off any straggly beards. Throw away any that remain open after a few seconds when lightly tapped.
Heat a large lidded saucepan and add the oil. Sauté the chilli, garlic, onion and fennel and cook gently for a good 15 minutes until everything is nicely softened.
