Pasta is always a winner when it comes to wanting something fast and that is exactly what this is (as well as being rather delicious and exceptionally colourful). Try to avoid using pickled beetroot if you can, because you’ll find the vinegar flavour is a little too strong and overpowering. It’s best to use the packs of fresh beetroot in mild vinegar sold in the salad section of the supermarket.
