Ingredients

  • 4 medium-large carrots
  • 2 large sweet potatoes
  • 1 celeriac
  • 3-4<

Method

Preheat the oven to 220°C/fan 200°C/gas 8.

Peel the vegetables and cut the carrots, sweet potatoes and celeriac into 3 to 5cm chunks or wedges. The beetroot can be cut into four to six wedges each.

Place the vegetables in a roasting tray in a single layer
