Wash and roughly chop the greens, removing any tough stalks.
Melt the butter in a large frying or sauté pan and gently cook the garlic for about 30 seconds. Increase the heat, add the greens and toss around or stir-fry for about 5 minutes until they are becoming tender.
Add a couple of tablespoons of water and the mustard and continue to cook for a further minute or two. Season
