The fantastic thing about this recipe is that you can leave it to cook for at least 2½ hours (if not longer) without touching it, giving you plenty of time to go for a long walk, lazily read the papers or take a trip to your local. If necessary, it can even be made the day before. All you need to do is be around for the last 30 minutes to add some cannellini beans.
