To make life less manic, prepare the mash and sauce as early as you can and set aside to finish off at the last minute. That leaves the cod. Well, all you need to do is put it in the oven - simple. If you fancy a vegetable to serve with this, some wilted spinach or tenderstem broccoli would go really well.

For the Mash

  • 1.5 kg floury potatoes, such as Maris Piper or King Edward

Preheat the oven to 200°C/fan 180°C/gas 6.
