This is a rather luxurious treat. When serving a fabulous piece of meat like beef fillet, your best bet is to cook it simply like this.

Method

Preheat the oven to 200°C/fan 180°C/gas 6.

Season the beef with salt and plenty of black pepper. Heat the oil in a sturdy roasting tray on the hob and, when it’s very hot, quickly sear the beef fillet until it’s evenly browned all over.
