  • 1-2 flour tortillas
  • 2 tablespoons olive oil
  • 1 small ripe avocado

Method

Cut twelve circles from the tortillas using a 4 to 5cm pastry cutter or by cutting around a glass.

Heat the olive oil in a large frying pan and fry the tortillas in a single layer for about 1 minute each side until golden and crisp. These can be made well ahead of time.
