Method

Preheat the grill to medium.

Remove the crusts from the brioche and cut each piece into two bite-sized pieces or fingers just a little bigger than a slice of pear. Place on a baking tray and lightly grill both sides until just golden. Keep your eye on them because they will toast very quickly.
