Ingredients

  • 2 large cucumbers
  • 100 ml olive oil
  • 1 tablespoon

Method

Peel the cucumbers and roughly chop. Place in a food processor or blender with the olive oil, caster sugar, vegetable stock and mint leaves and season with salt and pepper. Blitz until completely smooth and then churn in an ice-cream machine or freeze according to the instructions opposite.
