  • 200 g caster sugar
  • 200 ml fresh lemon juice, strained

Method

Place the caster sugar and 300ml water in a saucepan and stir over a high heat until the sugar has dissolved. Bring to the boil and boil for 5 minutes until you have a light syrup consistency. Leave to cool and then stir in the lemon juice, lime juice and vodka. Churn in an ice-cream machine or freeze according to the instructions opposite.
