  • 225 g caster sugar
  • 900 g watermelon flesh

Method

Place the sugar and 125ml water in a saucepan over a high heat and stir until the sugar has dissolved. Increase the heat and boil for 1 minute. Leave to cool. Blitz the watermelon with the lime juice and strain through a sieve. You should have about 650ml juice. Mix with the sugar syrup and churn in an ice-cream machine or freeze according to the instructions opposite.
