Pale green peppermint flowers, teardrops or stars, you choose. Decorate with edible glitter or dip in chocolate once made. Have fun with these.

Ingredients

  • 1 large egg white
  • 375-400 g icing sugar, sifted, plus extra for dusting
  • 2 teaspoons

Method

Lightly whisk the egg white until it is frothy but not quite holding its shape. Gradually stir in enough of the icing sugar and lemon juice to create a pliable fondant paste.

On a surface dusted with some of the remaining icing sugar, knead in the peppermint flavouring and green food colour, if you are using it, a little at a time, until you have the flavour you’re happy with and a deli
